Aging Your Frauxmage at Home

To age your Frauxmage, it's best to place it in the covered compartments located on the doors of the refrigerator

For Camembert: keep in the original paper packaging and leave to "grow" the rind for 5 days to 2 weeks, depending on your taste! The amount of time it's left to develop, determines how thick the rind will be and how much more dense the interior of the cheese wheel will get.

For True Blue: remove from the shrink wrap and loosely wrap your Blue with parchment paper. You'll see when you purchase your Blue how it is marbled, however it will be covered with blue bacterial culture after aging, which is perfectly normal even though it resembles mold! Leave for 5 to 10 days to achieve your preferred strength of flavour.
